summer cake with blueberries.

Batter:

125g butter
3/4 dl sugar
1 egg
1/2 dl flour
1/2 tsp baking powder
4 dl oat flakes

Filling:

3 dl blueberries

2 dl sour cream
1/2 dl sugar
1 egg
2 tsp vanilla sugar


1. With an electric mixer, mix together the butter and the sugar. Add the egg.
When the mixture is pretty smooth add the rest of the batter-ingredients. Spread the batter on the buttered cake tin.
2. Spread the blueberries on top of the batter.
3. Mix the sour cream, sugar, egg and vanilla sugar together. Pour it on top of the blueberries.
4. Bake in the middle level of the oven in 175℃ for about 35 minutes.

This cake was super delicious. Not too sweet and I loved the crunchiness of the batter. So, so yummy.
Apparently it's a good thing that you have a sour cream which was going bad in the fridge. Then you "have to" use it and you end up baking a delicious blueberry cake. Not bad.

Tää kakku oli aivan tosi herkullinen. Ei liian makea ja tykkäsin taikinan rapsakkuudesta. Niin hyvää.
On näköjään hyvä juttu että jääkaapista löytyi pian huonoksi menevä kermaviili. Koska se oli "pakko" käyttää päädyin leipomaan herkullista mustikkakakkua. En valita.
