birthday bakings.

Coconut cupcakes

85g dark chocolate
½dl milk
1tbsp cocoa powder
115g butter
115g muscovadosugar
2 eggs
3tbsp crème fraïche
175g flour
½tsp baking soda

Frosting:
115g white marshmallows
3tbsp milk
3dl double cream
55g coconut flakes


1. Melt the chocolate, milk and coconut powder. Stir until smooth.
2. Whisk the butter and muscovadosugar until pale and fluffy. Stir in the eggs in small portions and add the melted chocolate-mix and crème fraïche. Carefully stir in the flour and the baking soda.
3. Put the batter evenly into cupcake tins and bake in 18-20minutes in 180℃/356℉.

Frosting:
1. Put the marshmallows and the milk in a bowl. When they have melted, let them cool down. Whisk the cream until hard and fluffy and add it with the melted marshmallows. Add 35g of the coconut flakes and put it in the fridge for 30minutes.
2. Put the frosting on the cupcakes and add coconut flakes on top of the cupcakes. You can decorate the cupcakes with melted dark chocolate if you want.

White-chocolate blueberry cheesecake

200g digestive-cookies
100g butter

Filling:
400g melted white chocolate
2,5dl double cream
400g cream cheese
blueberries

1. Put parchment paper on a springform cake pan. Crush the cookies and mix them melted butter. Press it into the base of the cake tin. Cool down in the fridge or in the freezer while making the filling.
2. Melt the white chocolate. Beat the double cream and the cream cheese together with an electric mixer and add the melted chocolate while mixing.
3. Pour about half of the filling into the tin, add blueberries and add the rest of the filling on top of the blueberries.
4. Let the cake cool down in a fridge (or a freezer) at least for 3-4hours or overnight.
5. Decorate with dark chocolate, berries or whatever you want :)

Marshmallows with chocolate and sprinkles

Marshmallows
Dark (or white) chocolate
Sprinkles of your choice
Wooden sticks

1. Melt the chocolate in a bowl and pour some sprinkles in another bowl.
2. Put the marshmallows in the end of the stick and dip them into the the melted chocolate. Then dip them into the bowl with sprinkles.
3. tadaaa :D let the chocolate harden before serving.

Tomato-bites

puff pastry
cherry tomatoes
cream cheese (I used salmon and chive flavored cream cheese)
herbs of your choice (I used rosemary)
eggs

1. Cut the puff pastry in to squares. Spread the cream cheese evenly on the battersqueares leaving the edges "clean".
2. Cut the cherry tomatoes in halves and put them onto the cream cheese covered squares and add the herbs.
3. Spread the egg on the "clean" edges with a brush and bake the tomato-bites in the oven for about 10-12minutes in 225℃/437℉

We had also cocktail sticks with cherry tomatoes, brie-cheese, grapes, mozzarella and basilica.
And I made bulgarian baniza, a feta-cheese pie.

Meillä oli myös cocktail tikkuja joissa oli kirsikkatomaatteja, brie-juustoa, viinirypäleitä, mozzarella ja basililkaa. Ja tein myös bulgarialaista banizaa, fetajuusto-piirasta.
