1,75 dl almond flour
2,5 dl powdered sugar
2 egg whites
0,5 dl sugar
food coloring (I used blue and pink)
1. Mix the almond flour and powdered sugar together. Sift it to a bowl.
2. Put the egg whites in a big bowl and mix with a hand mixer until the eggs are frothy. Add the sugar and mix until the mixture is shiny meringue. Add food color of your choice until the meringue gets the color you want.
3. Add the almond mixture to the meringue in three parts by lifting the batter carefully. When the batter is well mixed put it in a pastry bag and pipe out circles.
4. Let them wait 30minutes in room temperature. After 30minutes bake in a preheated oven in 150℃ for 10-15 minutes.
For the filling, you can make your own. I didn't personally like the ones in my recipe book that much so we made our own for the blue ones. Basically you can make the filling from different kinds of buttercreams, cholocate, jams, cream cheese etc.
