Blueberry and vanilla muffins ♥

I baked muffins for the finnish independence day and you asked for the recipe. Finally I can give it to you :) So here we go:

Leivoin muffinsseja Suomen itsenäisyyspäivän kunniaksi ja pyysitte reseptiä niihin. Vihdoin mulla on antaa se teille :) Joten olkaapa hyvät:

The recipe is from a book called Mini Cakes.

1 cup self rising flour 
½ tsp baking powder
½ cup sugar
½ cup blueberries
2 tsp vanilla extract
1 egg
½ cup buttermilk
2 tbsp vegetable oil


1. Preheat the oven 375℉/190℃
2. Sift the flour and baking powder into a mixing bowl. Stir in the sugar and blueberries. In a separate mixing bowl, beat together the vanilla, egg, buttermilk and oil with a fork until evenly combined. 
3. Turn the buttermilk mixture into the flour. Using a metal spoon gently fold the ingredients together until just mixed. 
4. Spoon the batter into the paper liners; it should be level with the top of the pan. Bake for 15 minutes.

Frosting (The recipe didn't have a frosting so I did my own)

200g cream cheese (philadelphia)
200g white chocolate

1. Melt the chocolate
2. Add the cream cheese and mix with an electric mixer.
3. Let it cool down before you frost the muffins.
